The time has come for me to write my big scary exam which I have been prepping for since September.
Thank god it's almost over!
I won't actually get my mark for a couple stupid long weeks, but I figure I will have a pretty good idea if I rocked it or not when I hand it in tomorrow morning.
At least it 'tis the season to be drunk and fat! That'll keep me distracted for a while (hopefully!).
I can't wait to be "bored" in the evening! I can't wait to not have to study. I want to start watching all the movies on my favorite Christmas movie list! Maybe I'll have time to work on some of those crafts I've been wanting to do. How nice it will be to have a completely open evening with no study obligations!
So everyone, please be wishing me luck, and sending me lots of smart vibes between 9am and noon tomorrow! This tired our mommy brain is going to need all the help it can get.
To distract myself from being stressed, seeing as it was too early to start drinking, Growly Bear and I played in the kitchen this afternoon and tried a brand new Christmas Recipe. It was a huge success, so I've included the recipe for ya'll!

Apricot Squares
(With Coconut, Almonds, and Lemon)
Crust:
- 1 cup butter, softened
- 1/2 cup white sugar
- 2 cup all-purpose flour
- 1 tsp vanilla
Filling:
- 1 cup dried apricots
- 2 cups water (for boiling apricots)
- 2 eggs
- 2/3 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- juice from 1 lemon
- 1 cup chopped almonds
- 1 cup flaked coconut
- 1/4 cup confectioners' sugar for decoration
Directions
- Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 2s cup flour. Press into the bottom of an greased 9x13 inch pan.
- Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
- In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut. Pour over the prepared crust.
- Bake for an additional 20-25 minutes in the preheated oven, or until firm and just starting to brown around the edges. Cool, and dust with confectioners' sugar before cutting into squares.
