Life As We Know It
 
Growly Bear, who has always been the worlds best eater, has decided she doesn't want to eat anymore. Like at all. I'm lucky if I can get a couple bites per meal into her.
I think it's nasty teething? Or, perhaps she's just bored of my cooking? Or she's too busy to stop playing and exploring long enough to consume anything substantial? I really don't know. But it's beyond frustrating becasue she's started waking up hungry at midnight and asking for a "bubba". And then again at 6am. Ummm... Didn't we stop the double middle of the night feedings at 4 months old?
Of course I play along and get her the requested "bubba" becasue I'm not completely evil and I don't want my child to be starving all night long, but I am pretty tired and feeling like we are back in the new born stage again!
So, last night, after a failed attempt at a healthy dinner, before bedtime, I let her eat a fairly sizey slice of Rhubarb Spice Coffee Cake... Yup. That's right. Completely empty calories to fill her completely empty tummy. Mother of the year award right here!
But  you know what? It worked! (It was either the large slice of cake, or the fact that she snatched her Daddy's full beer bottle and chugged a couple good gulps before we could get it back from her right after she has her cake.... true story!). She slept till almost 3am before waking up and yelling for a "bubba" last night! And then went back to sleep till the lovely hour of 8:00am. (It had been closer to 6am for the past week!)
She's pretty full of "noodles" (chow mein) and strawberries tonight, so I'm hoping for another good sleep! Fingers crossed.
I've included the delicious recipe for the Rhubarb Spice Coffee Cake so that you can all have a good nights sleep too. Hope you enjoy!

Rhubarb Spice Coffee Cake

Ingredients:
  • 1 1/4 cups white sugar
  • 1 tsp baking soda
  • 1/2 tsp salt 
  • 2 tsp apple pie spice
  • 2 cups all-purpose flour
  • 2 eggs, beaten 
  • 1 tblsp good vanilla
  • 1 cup sour cream
  • 3 cups diced rhubarb

  • 1 cup white sugar
  • 1/4 cup butter, softened
  • 1/4 cup all-purpose flour 
  • 1/4 cup oatmeal
  • 1 tsp apple pie spice


Directions:
  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
  2. In a large bowl, stir together 1 1/4 cups sugar, baking soda, spices, salt and 2 cups flour. Stir in the eggs, vanilla and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly.
  3. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour, oatmeal, and apple pie spice until the mixture is crumbly. Sprinkle the mixture on top of the cake.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.
