It's happened! I've been waiting for it. Hoping for it. Wishing for it. And then BAM! There it is! The urge to blog!
When I posted frequently two (three? OMG, time flies!) years ago, it always came easily to me. The words just flowed. I didn't have to think about what I was posting. I just posted. But I lost it. I got tired, and busy, and it felt like work. So I stopped.
I missed it! I wanted to want to post again. I wanted to have funny, interesting, cute, things to say. But I didn't.
I feel like maaaaybe, I might have things to say again? Maybe it's a one time thing. Maybe not. But I just had the urge to post today. So here I am!
Anywho, it's December. And as you all know, I LOVE December. The decorations. The lights. The friends, and food and festivities. The pressies, and movies, and pretty much all of it! Growly Bear (4.5 ears old) and Oopsie (2 years old in two weeks) are at the most wonderful, fun ages. They are so excited for Santa this year, and I would be lying if I said the Daddy unit and I weren't equally excited!
For the first time ever, we have the room to host Christmas Morning at our new home! And we are thrilled! My momma and daddy have always been the all-day Christmas hosts in the past, as they have the mansion on the hill. Now that we have our little shack down at the Grotto though, we get to share the day! We are super excited to have pressies around our tree with our family, and I think my momma is happy to get to share the day so she can relax a little too for the first time in ages.
The season seems extra exciting for us this year also, because we are running away to Mexico, for two weeks, on January 1st! I had the best intentions to have my body bathing suit ready in time for our adventure. But it's pretty much a loosing battle with all the Christmas parties, and baking, and wine, and food, and me loving everything that I shouldn't. So I've pretty much accepted the fact that I will be festively plump for the beaches.
Speaking of baking, Growly Bear and I did a little baking this afternoon while Oopsie was napping. Seeing as it's been forever and a day since I posted a recipe, I thought now would be the perfect time!. So, I share with you, my Kick Ass Butter Tart recipe - The secret is to use pecans instead of walnuts. Mmmmm. Hopefully you all enjoy!

Kick Ass Butter Tarts
- 1 1/2 cups packed brown sugar
- 2 eggs
- 1/2 cup butter
- 2 cups raisins
- 2 tablespoons heavy cream
- 1 tblsp real vanilla
- 1 cup chopped pecans
- 30 (2 inch) unbaked tart shells
Directions
- Preheat oven to 350 degrees F
- Cream the butter, sugar, eggs and vanilla well. Add remaining ingredients and mix thoroughly.
- Pour batter into tart shells, about 2/3 full. Bake for 20 - 25 minutes.
